Back from a Yummy Vacation…Part Two

So we spent ate a week in DisneyWorld and here’s pretty much how that went (notwithstanding the many meals I forgot to photograph because I was either too hungry or didn’t have my camera).

Our first night, we stayed at the Polynesian and had dinner at the Kona Cafe, which is one of my favorite Disney restaurants. I had the Kona Salad and the Lump Crab Cakes, both off the appetizer menu.Oh, are those pics blurry? Must have been the two Mojitos I sucked down. Hey, I was on a long-deserved vacation!

The next day, we transferred over to Animal Kingdom Lodge: Kidani Village where we were spending the rest of the week. My first meal there was a Jerk Chicken Caesar salad eaten at the bar at the pool. Man, I love vacation!That night we had dinner at Sanaa (sorry, no pics. Was too excited to see family), but that’s where I fell off the “no beef” plan* accidentally when I tasted Chris’ short ribs. He ordered the “Slow cooked in Gravy, Simple and Well-Seasoned” and chose the Short Ribs and the Shrimp with Green Curry Sauce. The shrimp were out of this world! I had the Vegetarian Sampler which was good, but not as good as the shrimp. We also had the Bread service. Everything was super tasty and quite an adventurous meal for the rest of our crew who wasn’t used to eating anything so exotic. I was proud of them for giving it a try!

And the evening ended with this:I’m thankful I only ate an ear of the recently super-sized Mickey Rice Krispy treat. They tried to pawn the leftovers on me, and I staunchly refused. One ear was enough!

We had a great view of the castle down Main Street in the Magic Kingdom – you’ll just have to imagine the fireworks!More eats coming up!

*If you’ve been paying attention, you’ll recall that I was going to eat Pescetarian, but, oops, I had chicken for lunch. I needed the protein and the pool bar menu was a little skimpy. Expensive and skimpy. Theoretically, it was a good plan.

I told you here that Jay Robb was coming to DisneyWorld (WDW) with me and here’s the proof:

As promised, during our week at WDW, every morning I had either a whey protein shake or a CarbRite bar. Every morning except the last morning when we went to BOMA for the breakfast buffet, but even there I didn’t go bananas.

We stayed at Animal Kingdom Lodge: Kidani Village and this view is off our deck overlooking the savanna where most of the time we had Ankole Cattle such as these:or Giraffe:Of course, I take the picture of my awesome smoothie the morning that there’s nothing out there but a maintenance guy (who I promptly cropped out of the picture).

There were a couple of times when I started to feel blasé about having wildlife outside my window (ho hum, a zebra), but I always kicked my butt back into reality and a place of gratitude. Hello? It’s not every day you get a giraffe outside your window (for the same price as a non-giraffe resort).

So I did promise myself that I’d start each day in a low-carb healthy way, and I also thought I’d do the trip Pescatarian, just for something new. Here’s what happens when you decide to eat in a way that’s not actually in accordance with any personal beliefs: you forget! The very first night, I had a bite of Chris’ short ribs. (I do love short ribs!) We had barely been there 24 hours, and I’d already forgotten my plan!

But, fear not, I kept the rest of the trip fairly under control. See?Yes, that is a Rice Krispie treat the size of my head. It cost $11. I shared it with Chris’ sister’s boyfriend (a strapping college football player who probably burned off the calories while opening the plastic wrap), and I only ate one ear. The next morning, my mouth felt like it’d been hacked up with razor blades ( a little foreshadowing to a few days later when my throat felt hacked up by glass, but that’s another story).

RAW RAW Sis Boom Bah Giveaway!

We all take our snacking seriously and Brad’s Raw Chips has come up with an ingenious way to keep it healthy! These chips are “dehydrated, not baked, to maintain the living enzymes your body was meant to digest.” Whoohoo!

Not to mention that fact that they are yummy and have a fabulous texture. Each flavor is a little different, with some chips lighter than others, but I would say the texture is between a light potato chip and a Wheat Thin cracker (neither of which I’ve touched in a long time, but I do have a very good snack memory).

Fabulous flavor for an all-natural snack. Why can’t others leave out the MSG for goodness sake? Dipped in hummus or salsa – fantastico!

BUT WAIT, THERE’S MORE – While on the phone with my sister-in-law, I looked over at the Brad’s box and realized it had a whole other box taped to the bottom! They are the most generous folks ever! Mini goats without the yodeling…

Sorry, I couldn’t resist. Good luck getting that out of your head.

Well, I’m happy to say there were NO lonely goatheards at Goatfest 2010 put on by the Seattle Urban Farmers Coop. Instead, there were just unbelievably adorable baby La Mancha goats:That wanted to nibble on my ear. Female La Mancha’s can be milked, and their milk can be used for all sorts of good stuff like goat cheese and cajeta. My new friend, Annette, who keeps an amazing city garden, raises kids (of the human variety), AND maintains the awesome blog Sustainable Eats, made both cheese and soap (don’t wanna get those two confused) to demonstrate a few of the practical uses of goat milk.

Though I did catch Chris Googling chicken coops the other night, I think we’re going to stick with our honeybees for now. Though goats are tempting….
